As I've been looking for egg & dairy free recipe for quite some time so I was very excited and tried out the recipe on the night itself.
I modified abit of Samantha's recipe.
Instead of vegetable oil, I used E Excel Blended Cooking oil for 2 reasons:
1. higher smoke points (Each type of cooking oil has its own smoke point. Once the temperature of the oil's smoke point is reached, the oil starts to break down and smoke, producing toxic, or even carcinogenic, substances.)
2. perfect Omega 6: Omega 3 ratio (A high omega6:omega 3 ratio, as is found in today's Western diets, promotes the pathogenesis of many diseases, including cardiovascular disease, cancer, osteoporosis and inflammatory and autoimmune diseases.)
In order to make the yummy chocolate cake healthier in the sense add in more vegetables (in fact up to 28 types of Vegetables!) I added in 1 sachet of Vegecolor. And it blended well into the cake :).

Ta Da.... it's done in 35minutes!!! the texture is just nice and delicious!
Immediately I made another 2 Vegecolor Chocolate cakes for my customers as Xmas present whom I meeting with today.
And just nice to put into Oxyginberry & Ever Stay D boxes for delivery, haa.....
