Vegan Mac and Cheese (with no cheese)

Over the weekend, we decided to cook western instead of usual chinese food for dinner. After googling, we realised that the vegan mac and cheese is not difficult at all, almost dummy proof with simple ingredients.

Thank you to this simple Vegan mac and cheese recipe we found online.



So after getting the ingredients ready, here we go :)

We modified, hmm i think use simplify better. 

Yes, we simplified the ingredients further, by leveraging on the convenience of Soup de EExcel (Click Here) :)

Ingredients:

1 cup Macaroni
2 cups Potatoes - peeled and chopped
1 cup Carrot - peeled and chopped
1 cup Cashew nut - washed 
1 cup Broccoli - cooked
2 sachets of Soup de EExcel 
(so I can skip the hassle of preparing onion, garlic powder, salt, yeast and etc)

Steps:

1. Boil the potatoes and carrot and broccoli, until soft.
2. Broccoli set aside first, it is to go along with mac and cheese.
3. Boil the macaroni according to the instruction on the packaging.
4. Blend the boiled potatoes, carrot, cashew nuts & 2 sachets of Esoup until smooth.
5. Pour the No.4 onto cooked macaroni & serve with cooked broccoli.

Tada... that's our delicious, nutritious, and hassle free vegan mac and cheese 😋
